“Bourbon Barrel-Aged Carioca-Inspired Stout • 12.7% ABV • We teamed up with our friends at GOAL Brewing to craft a robust, chewy stout that spent sixteen months maturing in Heaven Hill barrels. Cask tasting was a dream, and in light of its already exceptional flavor profile, our Pilot/R&D Brewer Bayani Hilo sought to finish the beer by drawing inspiration from the delicate Filipino pastry, carioca. Think coconut mochi fritters — they’re a sweet, chewy, textural experience made with rice flour and coconut, fried and coated in a caramel sauce.
To hit that flavor inspiration, we recirculated the stout on fresh coconut and mini marshmallows for an extra body bounce, then finished with Tahitian vanilla, toasted rice, and amburana chips for a note of subtle baking spices. Infinite Variables emerges as an indulgent, full-bodied brew with complex layers of chewy tootsie roll, lightly spiced coconut, and bourbon-soaked caramel.” – Bottle Logic
