Handpicked from a tiny organically farmed plot in Macclesfield, based in the Adelaide Hills. Destemmed into open top fermenters, foot trodden & gently hand plunged. Wild fermented on skins until dry, the fruit was then transferred to stainless steel where the wine remained on skins for a total of 99 days before it was pressed & returned to mature. Bottled unfined & unfiltered.
'Viognier turned up to 11! We're delighted to get a slightly larger amount of this vintage after 2020 sold out in record time. A much more savoury, grippy take this release. Paw paw, dried apricot, carribean spices, ripe melons just to name a few on the nose. More tropical notes on the palate but not a hint of sweetness in sight, mandarin peel, starfruit, jasmine, and rose petal. This wine comes together in it's rich structure making an orange wine with great backbone worthy of even the most daring food pairings.' - Joe Perry
