Pale, hazy ruby colour. Nice. Scents of sweet cherry, maraschino, white pepper, mint and fennel herb character. Nice. Slippery texture, all sour-sweet flavours, dusting of white pepper added to that herbal thing and cherry juice finishes it all off. Light, shy wine of plenty of freshness and lift. Handpicked Pinot Meunier from Summertown in the Adelaide Hills & farmed without the use of systemic nor synthetic chemical inputs. Fermented wild as 100% wholebunch & foot-stomped once daily for the first 5 days of ferment. The resulting wine was pressed direct to neutral oak & remained on full solids for 5 months where battonage occurred once monthly. Settled in stainless steel and bottled by hand. Unfined and unfiltered.
