A single cask rum from Plantation bottled exclusively for and chosen by local distributors Proof & Company.
This was drawn from multiple distilaltion runs in 2010, 2006 and 2004 between column and pot stills at Peru's Destilerias Unidas S.A.C.
Distilled from molasses, the fermentation was 3 days and the rum carries an ester level of 64 g/hL AA, a volatile compound level of 484 g/hL AA with 8 grams per litre of dosage (added sugar).
Initially aged in ex-bourbon and Slovenian oak casks before it was finished in a Willet Rye whisky cask.
Bottled at 49.8%.
Nose: It starts with vanilla and rye whisky notes. It then evolves to wood smoke with a balsamic touch.
Palate: Rich, quite woody and fruity, notes of cooked pear and banana, and drier notes of ginger pepper, almond and nutmeg.
Finish: Long and rather dry with milk chocolate and walnut.
In 1989 the Maison Ferrand cognac house was taken over by Alexandre Gabriel, who planned to return one of the region's oldest spirit brands to the height of its powers. Starting with cognac and then moving into other fine spirits, Gabriel scoured the Caribbean throughout the 1990s in source of rum.
From those trips the Plantation brand was born. Rums are transferred to France, where they undergo final maturations in a variety of casks.
