A single cask rum from Plantation bottled exclusively for and chosen by local distributors Proof & Company.
This was distilled at Guatemala's Distillery Of Alcohol And Rum from molasses through a column still.
The fermentation was 2-3 days and the rum carries an ester level of 54 g/hL AA, a volatile compound level of 238 g/hL AA with 20 grams per litre of dosage (added sugar).
Initially aged in an ex-bourbon casks before second maturation in red pineau Maison Ferrand casks in France.
Bottled at 41.2%.
Nose: Elegant and balanced profile of wood, spices and fruits. Apricot with some flowery notes at the end.
Palate: Rich with pineapple, plum and sour cherry. Delicate and balanced with rose petal and ylang-ylang.
Finish: Quite long, spicy, fruity, with cooked apple and fresh with hyacinth.
In 1989 the Maison Ferrand cognac house was taken over by Alexandre Gabriel, who planned to return one of the region's oldest spirit brands to the height of its powers. Starting with cognac and then moving into other fine spirits, Gabriel scoured the Caribbean throughout the 1990s in source of rum.
From those trips the Plantation brand was born. Rums are transferred to France, where they undergo final maturations in a variety of casks.
