A single cask whisky from an undisclosed distillery on Orkney (so that’s Highland Park or Scapa then), bottled by North Star.
Distilled January 2007, this was matured in a refill bourbon hogshead and bottled February 2019 as a 12-year-old at 55.5%.
Probably the best and most precise ‘Okrney’ North Star have bottled recently, the peat element is not muddy at all.

Nose: Freshly cut grass and salty sea air.
Palate: Honey and chamomile tea.
Finish: Banoffee pie and a burning hardwood fire.
