The Niida Honke brewery in Fukushima prefecture and known for the "shinzenshu" style, a sustainable and organic approach to sake production. They use only organic rice, natural yeast starter, emply no sediment removers and use only spring water from lands that they own.
This is Niida's nigori offering, an un-filtered style that leaves a lot of rice sediment in the bottles.
The rice varietal is Toyonisiki, polished to 80% and this is best served chilled.
