A savoury gin made with olives, almonds, oranges and herbs from the surrounding area of Never Never's McLaren Vale gin distillery.
Part of the distillery's Dark Series of experimental releases, this uses Somerton almonds from Taronga, Lloyd Brothers Kalamata olives and McMillian and Drew herbs which include lemon thyme, thyme, bay leaf and basil.
Oleria Axillaris, known commonly as the coastal daisy bush, was also foraged locally.
Bottled at 41%, this is representative of what Never Never describes as their "little slice of the Mediterranean in South Australia".
Nose: A heady combination of sea spray, fresh herbs, kalamata olive/olive flesh and lightly dried florals. Reminisce of coastal breezes on a warm summer evening. Pine tree and cooking spice lingers in the background setting the stage for our most complex gin yet.
Palate: Much like the local geology in McLaren Vale, this gin has layers! Creamy marzipan, citrus and olive oils creates a silky & luscious palate. This is balanced with a wave of mouthwatering saline from the olive brine and the considered inclusion of locally grown thyme, bay leaf and basil. While this profile leans towards a savoury expression, orange and foraged sea daisy lends a splash of freshness, complementing the dry finish.
