This fruited sour, our first Astral Project for vintage 2021, was made in collaboration with Valhalla Brewing from Torquay. It's hit the deck with perfect timing as Cape Jaffa Wines is in full stride of harvest - we now have a vintage beer to drink during vintage yay! We brewed a super light single-malt wort, essentially unhopped, and delivered it straight onto some beautiful handpicked Pinot Gris skins and juice.
A co-ferment in more ways than one, we used some souring yeast to help develop an integrated thirst-crushing acidity. Refreshing with a big hit of watermelon followed by a fresh signature floral punch that's synonymous with our single vineyard biodynamic Pinot Gris. And another cool thing, turns out our little skin-contact Pinot Gris sour is pink â what a variety to ferment on skins!
