"Kizakura" is an acclaimed Japanese sake brewery based in Fushimi, Kyoto, famous sake region in Japan for over centuries. Fushimi's natural medium soft water (Fushimizu) is one of the main elements that make Kyoto sake taste soft & gentle.
"Daku" means Cloudy in Japanese. "Nigori Sake" is unfiltered sake and often called cloudy sake in English. Normally, once the fermentatio is finished, sake is pressed and divided into clear sake and the white lees (residual yeast and other particles). But using the rougher filter to let the little lees go with clean sake is a way to make Nigorizake.
