This release from the Kilchoman distillery, bottled in 2021, focuses on first fill Madeira casks. The whisky was aged for five years and three months, before yielding 17,000 bottles at 50% abv. Kilchoman's style of peat shines when paired with rich fortified wine casks, creating a luxuriantly flavoursome dram, providing both salty, savoury Islay smoke, and the caramelised, rich chocalate and fruit from the Madeira casks.
Official Tasting Notes:
Nose: Caramel, orange zest and ripe plums with hints of mixed spices and rich smoke.
Palate: Bright citrus zest and peach notes with raisins, walnuts, dark chocolate and integrated smoke.
Finish: Juicy fortified wine, burnt sugar, dark fruits and lingering smoked Christmas cake.
Founded in 2005, Kilchoman was the first new distillery to be built on Islay in over 124 years. Anthony Wills, Kilchoman Founder, set out to resurrect the grass roots tradition of farm distilling.
