A 15-year-old single cask from the Auchroisk distillery, bottled by Infrequent Flyers as release #61.
This was distilled in 2006 and bottled 2021 as a 15-year-old.
Finished in sauternes hogshead #5751, which yielded 286 bottles at 59.1%
Nose: A big nose - dried figs, treacle toffee and peanut brittle.
Palate: Rich, viscous and oily. Multi-layered. Apple strudel and stewed raisins. Rum baba and dark chocolate. A slightly spicy edge.
Infrequent Flyers is part of the Alistair Walker Whisky Company, which was established in 2018. Walker, son of Billy Walker (GlenDronach/BenRiach-now-GlenAllachie), has over two decades of working around Scotch whisky in various capacities.
The name Infrequent Flyers refers to the cask selection process and Alistair’s penchant for discovering and introducing excellent single casks from distilleries not often experienced as single malts. These includes malts earmarked for blended and sometimes owned by bigger companies who have not released them regularly or consistently to the market.
One of Diageo's workhorse distilleries: founded in 1974, Auchroisk goes into a range of Diageo's blends and is quite versatile. Sometimes grassy, it almost always has an element of spiciness to it.
