An elegant and semi-sweet sake from the Hourasien brewery in Aichi. Bi (beauty) is one of Houraisen’s flagship sakes. It is a very elegant style of Junmai Daiginjo. This sake is bottled straight after pressing to deliver very flesh style Junmai Daiginjo. It has a nose that indicates sweet fruits. The palate shows a good balance between the gentle acidity and the sweet fruit flavours.
Hourasien is the sake brand of Sekiya Brewing, which was established in the Aichi Prefecture (about halfway between Tokyo and Osaka) in 1864. Here, the rice used is Yamadanishiki, grown in Hyogo and milled to 45%.
Showcasing a balance between those sweet fruits and a gentle acidity, this is best served chilled and works well with sashimi, fish, miso and yuzu-dishes.Steamed shellfish would also work very well.
