A small batch gin made by Domaine Guillemot-Michel in the MÃ¢connais district in the south of Burgundy.
As well as outstanding biodynamic wines, this domaine distils spirits - including this gin which was introduced in 2017.
A double distilaltion of Chardonnay grapes on a wood-fired still creates the eau de vie. Then for several days, seven botanicals, carefully chosen plants and berries, will macerate in the white brandy and transmit their characteristics to it.
A third and final distillation run is then carried out.
"As with the creation of a perfume, all the difficulty lies in the choice and the dosage of botanicals. It took us almost two years of testing to achieve the right balance. Hundreds of botanicals were tested to retain only seven: two spicy base notes, juniper and coriander, three citrus in the middle notes, grapefruit, lemon and sansho and two notes of vegetal heads, blackcurrant bud and cardamom."

Savoury, herbal, spice on the nose. Earthy palate leading to a floral, lavender finish.
