A savoury dry gin from Four Pillars made with olive leaf and olive oil.
Released August 2020 as a new addition to the stable, the Yarra Valley distillery first experimented with olives in 2015 with Cousin Vera's Gin, a collaboration with Spain's Santamania distillery.
This uses leaf and oil from Cobram Estate and joins the Four Pillars canon as the obvious martini choice.
From co-founder and distiller Cam Mackenzie:
"The aroma, flavour and texture of fresh olive is stunning, and we did an entire year of trials before finalising the recipe for this gin.
These trials landed us on our final mix of Olive Leaf Gin botanicals: a big base of juniper with a savoury overlay of coriander seed, rosemary and bay leaf from my backyard, olive leaf tea, olive oil, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit."
Bright, textural but savoury (cetainly not sweet), this sings in whatever your favourite martini is.
