A 12-year-old single cask from an undisclosed Orkney distillery, bottled by France's Dumangin J Fils Champagne house.
The bottler has finished the whisky for seven months in an ex-Ratafia Champenois cask, a style of fortified from Champagne that sees brandy added to grapes before fermentation. It is a drier style of fortified.
This was distilled October 2007 and bottled November 2019, with 413 bottles at 46%.
We think this is a Highland Park.
Oak Barrel tasting notes:
Gentle and round, nice underlying peat. Palate is very moreish and approachable. The barrel is giving a bit of complexity, the smoke melding with the oak tannin quite well. An aromatic Highland Park, ashy and contemplative.
