Whole bunches in fiber vats. First tank: crushing to make room and maceration whole bunches in the juice. Second tank: carbonic maceration. Vatting, pressing and assembly of the 2 vats and juice of drop and press juice. Maceration time: 3 weeks. Without any oenological input
This wine is named after a musical style that I particularly appreciate for its mix of hip-hop and powerful rock. My favorite bands are Rage Against The Machine (of course), Faith No More, Suicidal Tendencies, Body Count. Regarding wine, it is also the merger between Gamay said Auvergne and the Gamay said Beaujolais and between two types of winemaking.
100% Gamay (Auvergne & Beaujolais).
A dark berry and black olive salinity with slight floral elements. Slight paste like tannin and barely-there fizziness.
