The Collection No. 2 release from Venezuela’s Diplomatico distillery, this showcases rum distilled exclusively through their Barbet column still.
Rums from around the world after often blends or vattings of multiple distillation types, but there is a growing – and exciting – trend to highlight individual styles. This is evident in Diplomatico’s Distillery Collection series, which is released in small batches of 5,000 bottles or so.
Diplomatico installed the Barbet still into their La Miel distillery in 1959. A continuous distillation inspired by similar stills in France, it has two columns, two plates and two condensers. One condenser is for reflux, the other at the end of the process with a specific refrigeration designed to coax subtle fruits, creaminess and a hint of smoke.
Distilled from molasses, this release has been matured in American white/virgin oak.
The Barbet still results in a fruity, dry style rum driven by citrus notes.
