A mezcal distilled from jabali agave, which is notriously challenging to deal with but results in a baked, minerally and earthy mezcal.
Jabali has a habit of foaming during the production process, due to a compond that is activated after the roasting. The plant can take 18-to-20 years to grow to maturing and as a result Jabali mezcals are rare. This release, under Del Maguey's Vinos De Mezcal range, comes from the same producer who makes their Tobala.
On the nose, Wild Jabali offers notes of fresh figs, baked apples, star anise and a hint of paremsan rind. On the palate there is bright, beautiful acidity with high florals of sweet violets, herbal notes of tarragon and a slight sandalwood finish.
