Dassai have established themselves as one of the finest producers of sake in the world, turning a once close to bankruptcy brewery into a household name. To maintain the quality for their incredibly elegant, modern sake, all Dassai undergoes rigid product control and it is entirely because of a failure in strict environmental controls that we get to enjoy this wonderful daiginjo sake.
In Late June-mid July heavy rains led to widespread flooding and mudslides, and Dassai was not spared, though more minor in damage than many less fortunate, the flooding caused power failures which led to Dassai’s strict climate controlled system being comprised; while the sake was untainted and delicious it did not meet the rigorous requirements for release and all 600 000L was almost thrown out were it not for manga artist Kenshi Hirokane who convinced the brewery to release the sake under his famous manga’s name “Shima Kosaku”.
A delicious sake as expected from Dassai, smooth, fruity and complex and as an added bonus a portion from every sale is donated to Japanese flood victims.
