Smooth and floral with a lovely soft fruit flavour (melon/ripe pineapple).
Sakurai Hiroshi took over Asahi Shuzo at the age of 34 from his father, at a point when the brewery was virtually on the verge of bankruptcy. Wanting to improve their saké, Sakurai realised that instead of a mediocre product people wanted a high quality drinking experience so went about focusing the breweries efforts on highly refined, sipping daiginjo.
Asahi Shuzo is located in the city of Iwakuni in Yamaguchi prefecture and only uses yamada-nishki rice (some say Dassai helped cement the reputation of yamada rice).
The Dassai daiginjo 50 is a wonderful entry into the world of both saké and daiginjo sake and like all Dassai is excellent for sipping (Dassai’s motto is “We brew saké for sipping, not for drinking, nor saké for selling”)
