Stonefruit dominates the nose with a hint of pinapple, mango, and a subtle ginger spice. Light on the palate with a medley of flavours perfectly suited for food pairing. Overall, a clean profile with a good balance of sweetness, umami, and dry acidity.
Brewed using self-cultivated Yamada-nishiki sake rice from fields in the region surrounding the brewery, and “Fukuryu-sui” (a famous water used in tea making, which has been served to visiting royalty) drawn from Mt. Chikurin, which stands right behind the brewery.
