A sweet, fruity white molasses rum distilled at Sydney’s Brix distillery.
Founded in 2018, this is the first product from the distillery that was produced exclusively and the Surry Hills site.
The White is sweet on the nose, new-make hallmarks balanced with banana bread, caramel, vanillas. The palate is dryer, with a bit of citrus zest and a drying palate.
The sweetness makes it summery with over ice, or with a choice of soda/tonic, but there’s no denying this is also excellent cocktail fodder.
Brix was founded in the inner-Sydney suburb of Surry Hills in 2018. It was founded by Damien Barrow, James Christopher and Siddharth Soin with Shane Casey as the foundation distiller.
The first two releases are the White and the Gold – the latter an aged rum sourced from Barbados.
