The first batch from the White Peak distillery is a 2 Year Old Single Malt Spirit, a release of just 548 bottles at 50% abv. Matured in a single STR cask.
The founder, Max, wanted to build a distillery near a romantic river, and found the perfect site in the Derwent Valley, a World Heritage site. They built the distillery using local engineering companies where possible, but the stills were built by McMillan Engineering in Edinburgh, one of the oldest remaining coppersmiths in the world.
Offical Notes:
Nose: Green apple, coconut, and vanilla, with a touch of smoke and brine.Toasted wholemeal and herbal thyme.
Palate: Malty with rich toffee, black cherry, and chocolate. This is sweet and earthy, that gentle peat lingering in the finish.
That Boutique-y Whisky Company have bottled most distilleries in Scotland and are increasingly expanding to include whiskies from around the world. Their limited edition labels are designed by Emily Chappell and reference interesting elements (or in-jokes) about the distillery.
Boutique-y bottle their batches, which can be single cask or a number of casks, at the strength they deem the whisky is most enjoyable at.
