Pineapple has long been associated with drinks and hospitality and is increasingly being used in contemporary spirits.
Whole pineapples are roasted on a spit with Demerara sugar until caramelised, with the pineapple then combined with a gin.
As you can see, the colour remains in the gin - which needs to be bold and bright to deal with the intensity of the roasted pineapple.
The end result is complex and powerful, ginger beer is a good serving option.
