An incredibly unique and tasting rye whisky from Tasmania's Belgrove that has been smoked in sheep shit.
This expression has been long awaited since word spread about the experiment and it broke cover at the 2018 Sydney Whisky Fair. Now available in very limited quantities, this is a cask strength piece of Australian modern whisky folklore.
As the label itself says, "Belgrove sheep eat the spent distillery grain. Their dried dung was burnt instead of peat."
Just 155 bottles in the release at 57.8%.
The smoke here is rustic and herbal, big grassy notes, vanilla and smouldering camp fire.
Located about an hour north of Hobart, Belgrove's Peter Bignell grows all his own rye. He built his own still, which is direct-fired by bio-diesel. Belgrove is unique distillery for both Australia and the world and is probably the greenest distillery in the world.
