Farmed organically though not certified & machine harvested from Hilltops, NSW. 100% Pinot Gris from 2 sites in the Hilltops region, NSW. The bulk of the fruit (75%) was machine harvested and remained as whole berries in stainless steel & left to it's own devices. The remaining fruit was handpicked and carbonic macerated for 12 days & then pumped over until dry.
Both parcels were then pressed & matured in old puncheons for 6 months until they were blended & bottled. Unfined, unfiltered & minimal sulphites added at closure.
