The XLCR (say it out aloud) gin from Mudgee's Baker Williams distillery.
A bright, citrus-driven gin, the vapour-infused botanicals are sourced from all over the world. They include local cumquat and orange (which provide the big citrus hit on the nose) as well as Australian cinnamon myrtle and pepperberry (the spice).
Other botanicals include coriander, angelica, cardamom and cassia.
The gin takes its name from a fishing boat owned by distiller Nathan Baker's great grandfather. XLCR was built in 1903 in Illuka, on New South Wales' north coast.
The Baker Williams distillery was established in 2011 by Helen Baker and Nathan Williams. Located in Mudgee in New South Wales' Central West, they have been making craft spirits and liqueurs in the otherwise wine-dominated region.
As well as distilling spirit to be laid down in casks to eventually become things like whisky, they are producing gin, liqueurs and schnapps immediately.
Their bottles are instantly recognisable thanks to the striking labelling and long-drip wax seal.
