The name is of Senegalese origin, meaning “negoce”. This cuvee was made from 400 kgs of xarel.lo which was harvested by Aurelien in Penedes at La Salada and processed at Aurelien’s cellar in Madriat. He decided to buy these grapes from his friend Tony Carbo because he had always loved one of his wines made from xarel.lo. Carbonic maceration for two weeks is followed by a short elevage and the wine was then quickly bottled, as Aurelien intends this wine to age in bottle rather than barrel.
