The first batch of Archie Roseâ≢ Virgin Cane Spirit, a spirit distilled from cane juice inspired by the rhums famous through the French colonies.
The hotly-anticipated limited release for November 2016 is the latest release from urban Sydney distillery Archie Rose, whoâ≢ve been distilling since February 2015.
Inspired by Production Manager Dave Withersâ≢ love and fascination with rum, this is a clean, unrefined un-matured rum.
This was distilled from locally sourced sugarcane from Condong, in New South Walesâ≢ far north. It was cut and pressed into fresh juice within 12 hours.
Specific yeast strains were selected to begin the fermentation process immediately and the fermenting juice was transported overnight to the Sydney distillery to ensure it was as fresh and pure as possible.
The wash was triple distilled through copper pot still.
Batch 1 from this August harvest is limited to 2,020 bottles.
Weâ≢re drinking this neat in summer, but the distillery recommends trying it in a Bloody Mary, so some cocktail experimentation may be neededââ¾
Located just ten minutes from the Sydney CBD in Rosebery, Archie Rose is one of the country's leading urban distilleries. Their gin has been their trademark expression while they wait for their whiskies and rums to mature.
Elsewhere around the world youâ≢d be able to label this white rum, but the laws in Australia require rum to be aged.
