A cuishe mezcal from Aguas Mansas, this is herbal and vegetal.
Cuishe is part of the agave karwinskii family (alongside madre cuishe, barril and tobaziche) and tends to create mezcals that have herbal and mineral elements.
A vegetal and green nose leads to a palate that is sweeter than the nose suggests.
From Aguas Mansas, "It is powerful in aroma, deep smoky character and wild herbs and straw notes. Dairy-like aromas and flavors, macadamia and anise notes are distinguished in the mouth, when tasting more than once the aroma of wood still predominates."
Aguas Mansas is a small batch mezcal producer in Santiago Matatlan, Oaxaca. Juan Hernandez Santiago is the Master Distiller and they practise traditional production methods - hearts are cooked in a ground oven and groud by horse-lead stone wheel. Double distilled in copper stills.
