Aroma: Juniper and lemon peel with just a hint of mixed spices and dried florals.
Palate: A big hit of juniper at first, gives way to a complexity of dried citrus peel, lemon myrtle, chamomile and star anise.
Finish: Citrus persists through the finish with cinnamon and star anise simmering in the background.
Six Shillings Gin 50ml
Aroma: Mango and orange are prominent on the nose with a medley of other tropical fruits balancing with just a hint of juniper.
Palate: Gentle juniper at first before tropical fruits come through.
Finish: A gentle Tasmanian pepperberry spice through the continued tropical fruit to give balance and complexity.
Barrel Aged Gin 50ml
Aroma: Juniper, orange zest and French oak on the nose.
Palate: An oily and rich gin with a balance between juniper and orange giving way to the cedar and spice of the French oak.
Finish: The French oak spice lingers long with black pepper coming in late.
